Hot Eats, Cool Treats

No, not from Dairy Queen, although I could easily down a Peanut Buster Parfait and a Cookie Dough Blizzard on these hot June days. I'm talking about a cool treat courtesy of the folks at Splenda. Mmmm, watermelon AND raspberry. So easy too!

Watermelon Raspberry Popsicles

2 cups watermelon, seeded and diced (I like to go ahead and buy the seedless watermelons)
1 cup fresh raspberries
1/3 cup SPLENDA® No Calorie Sweetener, Granulated
1 tablespoon fresh lemon juice
1 tablespoon light corn syrup


1 Place all ingredients in blender or food processor. Blend until smooth. Pour ingredients out of blender. Strain through a sieve into a small bowl, pressing firmly to extract as much of the liquid as possible. Discard pulp.
2 Pour extracted juice into popsicle molds and freeze at least 6 hours or overnight.

What if you are allergic to watermellon? My husband would love these, but he says the "melons" make his ears "itch". I know it is crazy, but that is the way he is. Any substitutions? What makes that happen anyway?
